Santa Maria–Inspired Tri-Tip & Beans
Seasoned tri-tip is grilled and sliced across the grain, with warm beans, tomatoes, onion, and parsley alongside.
Serves 4
Directions
Set up the grill with medium-high direct heat and a cooler indirect zone. Pat the tri-tip dry.
Rub the beef with the oil, salt, garlic powder, pepper, and oregano. Sear over direct heat for 3 to 4 minutes per side.
Move to indirect heat and close the lid. Cook for 15 to 25 minutes more, turning once, until the thickest part reaches 145°F.
Rest on a clean board under loose foil for 10 minutes.
Meanwhile, cover and cook the tomatoes and onion in a saucepan over medium heat for 6 to 8 minutes. Stir and add water if the pan dries out.
Add the drained beans and vinegar. Simmer for 5 to 8 minutes, until hot, then remove from the heat and stir in the parsley.
Slice the beef thinly across the grain. Serve with the beans and spoon any resting juices over the meat.
